Banana bread french toast! Paleo friendly of course!

If you’re anything like me, then you absolutely love those big morning breakfasts that your mom used to make when you were younger. Well I decided to make one of these breakfasts and you guys are going to love it! Here’s what you’ll need:
For Bread:
  • 5 bananas
  • 2 1/2 c unsalted cashews
  • 2 c almond meal
  • 1/2 c melted coconut oil
  • 4 eggs
  • 2 tbsp honey
  • 2 tbsp baking soda
  • 2 tbsp baking powder
  • 1 tbsp vanilla extract
  • 2 tbsp cinnamon
  • pinch of salt
For French Toast:
  • 2 eggs
  • 1/2 c coconut milk
  • 1 tbsp vanilla extract
  • 1 tbsp cinnamon
For Compote:
  • 1 c strawberries
  • 1 c blueberries
  • 1/4 c water
  • 2 tbsp fat of your choice

First, preheat your oven to 350 F. Then what you’ll want to do is put your cashews in the food processor until they look like a cashew meal; add your coconut oil and blend until you have a nut butter. Add the bananas into the food processor until it looks like a smoothie. In a mixing bowl, place dry ingredients (almond flour, baking soda, powder, cinnamon and salt) and sift. Then add your wet ingredients (honey, eggs and vanilla) and whisk until you have a batter. Pour the batter into a greased meatloaf or bread pan, place in the oven and bake for 30 minutes or until top is crispy brown. While the bread is cooking, place your berries and water in a sauce pan on medium heat and allow to boil for about 5 minutes, this will create a berry sauce that will go great with the french toast! Once your bread is done, let it cool and cut into 1″ slices. Whisk all the ingredients for the french toast in a bowl, take the fat of your choice and let melt in a pan on medium heat. Dip your bread into the coating and toss that into the pan as well! When all of your slices are crispy and brown on both sides, you’re done! Of course you can cook bacon and eggs as well; That’s what I did, but any paleo sides will work. I hope you enjoy this great big paleo breakfast for you and your family!
